  • 4 medium zucchini
  • 1 pound shrimp
  • 2 cups canned crushed tomatoes
  • 1 medium onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

    Spiralize the 4 zucchini into noodles using a spiralizer or vegetable peeler. Set aside on paper towels to absorb excess moisture.

    Pat the 1 pound shrimp dry with paper towels and season with 0.5 teaspoon salt and 0.25 teaspoon black pepper.

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp to a plate.

    Reduce heat to medium and add the remaining 1 tablespoon olive oil. Add the 1 diced onion and cook until soft and translucent, about 5 minutes. Add the 3 minced garlic cloves and cook until fragrant, about 1 minute.
