Zucchini Boats with Beef and Sauce

Ingredients
- 2 medium zucchini
- ½ lb ground beef
- ½ small onion
- ¾ cup tomato sauce
- ½ tsp dried oregano
- ½ cup shredded mozzarella cheese

Preheat oven to 400°F. Cut the 2 zucchinis in half lengthwise and scoop out the centers with a spoon, leaving a 1/4-inch shell. Chop the scooped flesh and set aside.

In a skillet over medium heat, cook the 1/2 lb ground beef and 1/2 small diced onion until beef is browned and onion is soft, about 5 minutes. Stir in the chopped zucchini flesh and cook 2 minutes more.

Add the 3/4 cup tomato sauce and 1/2 tsp dried oregano to the skillet. Simmer until slightly thickened, about 3 minutes. Season with salt and pepper to taste.

Spoon the beef mixture into the zucchini shells. Top with the 1/2 cup shredded mozzarella cheese.

Place the boats on a baking sheet and bake until zucchini is tender and cheese is melted and bubbly, about 10 minutes. Serve hot.
