Ingredients

  • 1.5 lb pork shoulder steaks
  • ½ cup orange juice
  • ¼ cup lime juice
  • 3 garlic cloves
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    In a shallow dish, whisk the 0.5 cup orange juice, 0.25 cup lime juice, 3 minced garlic cloves, 1 tsp salt, and 0.5 tsp black pepper. Add the 1.5 lb pork steaks, turning to coat. Let sit for 10 minutes while you light the grill.

    Prepare a charcoal grill for direct heat. When coals are glowing and covered with white ash, place the pork steaks on the grate over the hottest part.

    Grill the pork for 4-5 minutes per side, until charred at the edges and cooked through (internal temperature reaches 145°F). The meat should feel firm but still juicy when pressed.
