Ingredients

- 2 tbsp mirin (or honey + 1 tbsp water)
- 1 tbsp rice vinegar
- 1 tsp ginger, minced
- 1 lb boneless, skinless chicken thighs, cut into 1-inch chunks
- 4 stems scallions, cut into 1-inch pieces
- 1 tbsp neutral oil

Whisk soy sauce, mirin, rice vinegar, and ginger in a small bowl until sugar dissolves.

Thread chicken chunks and scallion pieces onto skewers, alternating. Pat dry with paper towels.

Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.
