Ingredients

  • 3 tbsp soy sauce
  • 2 tbsp mirin (or honey + 1 tbsp water)
  • 1 tbsp rice vinegar
  • 1 tsp ginger, minced
  • 1 lb boneless, skinless chicken thighs, cut into 1-inch chunks
  • 4 stems scallions, cut into 1-inch pieces
  • 1 tbsp neutral oil

Instructions

    Whisk soy sauce, mirin, rice vinegar, and ginger in a small bowl until sugar dissolves.

    Thread chicken chunks and scallion pieces onto skewers, alternating. Pat dry with paper towels.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Lay skewers flat in the pan. Sear without moving for 3 minutes until the edges turn golden.

    Flip skewers and pour glaze over top. Cook 2 minutes more, turning occasionally, until sauce coats and sticks.
