Ingredients

  • 14 oz beef sirloin or ribeye, thinly sliced (about 1/8 inch)
  • 3 tbsp soy sauce
  • 2 tbsp mirin or honey
  • 2 cloves garlic, minced
  • 4 count scallions, white and light green parts separated
  • 2 cups cooked steamed white rice
  • 2 tbsp sesame seeds (white or black)

Instructions

    Combine soy sauce, mirin, and minced garlic in a small bowl. Stir until sugar dissolves, about 30 seconds.

    Pat beef slices dry with a paper towel, then toss in the marinade for 1 minute.

    Heat oil in a large skillet over high heat until it shimmers, about 90 seconds. Working in two batches, sear beef without stirring for 45 seconds per side until edges are dark and centers stay juicy.

    Slice the white parts of scallion on the bias and add to the skillet in the last 20 seconds of cooking.

    Divide warm rice between two bowls and top with seared beef, marinade, and crispy scallions.
