Ingredients
- 1.25 lbs pork spare ribs
- 12 oz baby potatoes
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp ginger, minced
- 2 tbsp scallions, sliced

Pat ribs dry and cut into single bones if needed. Toss potatoes with 1 tbsp oil, salt, and pepper on a sheet pan.

Arrange potatoes on one side of the pan, ribs meat-side up on the other. Roast at 425°F for 12 minutes.

Whisk soy sauce, brown sugar, rice vinegar, and ginger in a small bowl until sugar dissolves.

Remove pan from oven. Brush glaze all over the ribs, flip potatoes, and roast 10 minutes more until ribs glaze darkens and potatoes are golden.
