Ingredients

  • ¾ cup butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2.25 cups all-purpose flour
  • 1.5 cups white chocolate chunks
  • 1.25 cups macadamia nuts, roasted and halved

Instructions

  1. 1

Preheat oven to 325°F. Line two large baking sheets with parchment paper.

  2. 2

In a large bowl, beat butter and both sugars until pale and fluffy, ~3 minutes.

  3. 3

Add egg and vanilla. Beat until combined, scraping down the bowl.

  4. 4

In a separate bowl, whisk together flour, salt, and baking soda.

  5. 5

Add flour mixture to butter mixture. Stir until just combined, no lumps.

  6. 6

Fold in white chocolate chunks and macadamia nuts until evenly distributed.

  7. 7

Scoop dough into 1.5-tablespoon balls and place 2 inches apart on prepared sheets.

  8. 8

Bake for 12–14 minutes until edges are golden but centers still look slightly soft.

  9. 9

Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
