Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1.75 cups milk
  • 2 large eggs
  • ½ cup butter, melted
  • 1 cup blueberries
  • ½ cup maple syrup

Instructions

  1. 1

In a large bowl, whisk together the 2 cups flour, 1 tablespoon baking powder, and 1/2 teaspoon salt until combined.

  2. 2

In a separate bowl, beat the 2 eggs, then whisk in the 1 3/4 cups milk and 1/2 cup melted butter until smooth.

  3. 3

Pour the wet ingredients into the dry and stir until just combined; the batter should be slightly lumpy—do not overmix.

  4. 4

Preheat your waffle iron and lightly grease it. Pour about 1/2 cup of batter onto the hot iron and cook until golden and crisp, about 4-5 minutes.

  5. 5

Repeat with the remaining batter, keeping cooked waffles warm on a baking sheet in a 200°F oven if desired.

  6. 6

Serve each waffle topped with a handful of the 1 cup blueberries and a generous drizzle of the 1/2 cup maple syrup. Dust with powdered sugar if you like.
