Ingredients
- 8 slice ham slices
- 1 medium zucchini
- 1 medium carrot
- ½ medium onion
- 4 oz cheese
- 1 tbsp olive oil

Grate the 1 zucchini and 1 carrot, and finely chop the 0.5 onion. Place the grated zucchini in a clean towel and squeeze out excess moisture.

Heat the 1 tbsp olive oil in a skillet over medium heat. Add the onion, carrot, and zucchini, and cook until softened and lightly golden, about 5-7 minutes. Season with salt and pepper if desired.

Remove the vegetable mixture from heat and let cool slightly. Cut the 4 oz cheese into thin strips or shred it.

Lay out the 8 ham slices. Place a spoonful of the vegetable mixture and a strip of cheese on each slice, then roll up tightly and secure with toothpicks.
