Ingredients

  • 1.5 cups heavy cream
  • ½ cup whole milk
  • ¼ cup granulated sugar
  • 1.5 tsp gelatin powder (unflavored)
  • 1 tsp vanilla extract

Instructions

    Pour milk into a small bowl. Sprinkle gelatin over top and let sit 5 minutes to bloom.

    Combine cream and sugar in a saucepan. Heat over medium, stirring, until steam rises and sugar dissolves, ~4 minutes.

    Remove from heat. Add bloomed gelatin and vanilla extract; stir until gelatin dissolves completely, ~2 minutes.

    Strain mixture through a fine-mesh sieve into a bowl or pitcher to remove any lumps.

    Pour into four 6-oz ramekins or wine glasses, dividing evenly. Chill uncovered for at least 4 hours until set.

    Serve cold, optionally topped with fresh berries or a drizzle of berry coulis.
