Ingredients

  • 1.5 cups heavy cream
  • ½ cup whole milk
  • 3 tbsp granulated sugar
  • 2 tsp unflavored gelatin
  • 1 cup frozen berries
  • 2 tbsp honey

Instructions

    Heat milk in a small saucepan over low heat until steaming. Sprinkle gelatin over the warm milk and let sit 30 seconds to bloom.

    Stir gently until gelatin dissolves completely, about 1 minute. Remove from heat and pour into a bowl.

    Whip heavy cream with sugar until soft peaks form, about 2 minutes. Fold the cooled gelatin mixture into the cream gently.

    Divide cream mixture among 4 serving glasses or bowls. Refrigerate while you make the sauce.

    Heat frozen berries and honey in a small saucepan over medium heat, stirring occasionally, until berries break down, about 3 minutes.
