Ingredients
- 1.5 cups heavy cream
- ½ cup whole milk
- 3 tbsp granulated sugar
- 1 tsp vanilla extract
- 1.5 tsp gelatin powder (unflavored)
- 3 tbsp cold water

Pour cold water into a small bowl, sprinkle gelatin over it, and let sit 2 minutes until it blooms and looks spongy.

Heat cream, milk, and sugar in a saucepan over medium until steam rises and sugar dissolves, ~3 minutes. Do not boil.

Pour the warm cream mixture over the bloomed gelatin and stir until gelatin dissolves completely, ~1 minute.

Stir in vanilla extract, then pour into four serving glasses or bowls, dividing evenly.

Chill uncovered for at least 4 hours or until set to a silky custard with a gentle jiggle.
