Ingredients
- 1.5 cups heavy cream
- ½ cup whole milk
- 3 tbsp granulated sugar
- 1.5 tsp gelatin powder (unflavored)
- 1 tsp vanilla extract
- 1.5 cups mixed fresh or frozen berries
- 2 tbsp granulated sugar

Pour 3 tbsp cold water into a small bowl. Sprinkle gelatin over it and let sit 1 minute to bloom.

Heat cream, milk, and 3 tbsp sugar in a saucepan over medium until steaming (do not boil), ~3 minutes.

Remove from heat. Stir in bloomed gelatin until completely dissolved, then add vanilla.

Pour mixture into four small cups or ramekins. Chill in the freezer for 10 minutes, or refrigerator for at least 2 hours until set.

While panna cotta chills, combine berries and 2 tbsp sugar in a bowl. Mash gently with a fork until jammy, ~2 minutes.

Spoon berry sauce over each chilled panna cotta and serve immediately.
