Ingredients
- 1.5 cups heavy cream
- ½ cup whole milk
- 3 tbsp granulated sugar
- ½ tsp vanilla extract
- 1.5 tsp powdered gelatin
- 1.5 cups frozen berries (mixed or single type)
- 2 tbsp honey or jam

Heat cream, milk, and sugar in a saucepan over medium until steam rises, about 3 minutes. Don't boil.

Remove from heat. Sprinkle gelatin over the surface, let sit 30 seconds to bloom, then whisk until completely dissolved.

Stir in vanilla extract. Pour into serving glasses or small bowls, dividing evenly.

Refrigerate for at least 10 minutes while you make the sauce. Panna cotta will firm up but won't be fully set.

Heat berries and honey in a small saucepan over medium until berries break down and sauce thickens, about 5 minutes.
