Ingredients

  • 1.5 cups heavy cream
  • ½ cup whole milk
  • 3 tbsp granulated sugar
  • ½ tsp vanilla extract
  • 1.5 tsp powdered gelatin
  • 1.5 cups frozen berries (mixed or single type)
  • 2 tbsp honey or jam

Instructions

  1. 1

Heat cream, milk, and sugar in a saucepan over medium until steam rises, about 3 minutes. Don't boil.

  2. 2

Remove from heat. Sprinkle gelatin over the surface, let sit 30 seconds to bloom, then whisk until completely dissolved.

  3. 3

Stir in vanilla extract. Pour into serving glasses or small bowls, dividing evenly.

  4. 4

Refrigerate for at least 10 minutes while you make the sauce. Panna cotta will firm up but won't be fully set.

  5. 5

Heat berries and honey in a small saucepan over medium until berries break down and sauce thickens, about 5 minutes.

  6. 6

Spoon warm berry sauce over each panna cotta and serve immediately. Sauce will pool around the edges.
