Ingredients

  • 2 large red onion
  • 1 cup fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

    Peel and thinly slice the 2 large red onions into half-moons. Place them in a large bowl and sprinkle with 0.5 tsp salt, tossing to coat.

    Let the onions sit for 10 minutes to soften and release some sharpness. Meanwhile, finely chop the 1 cup fresh parsley leaves and stems.

    After resting, squeeze the onions gently to remove excess liquid. Discard the liquid and return onions to the bowl.

    Add the chopped parsley, 3 tbsp olive oil, 2 tbsp red wine vinegar, and 1 tbsp lemon juice to the onions.

    Season with 0.25 tsp black pepper and toss everything together until well combined.

    Let the salad marinate for at least 15 minutes at room temperature to allow flavors to meld. Taste and adjust salt or lemon if needed.
