Lebanese Fattoush

A crisp, tangy salad with toasted pita, fresh vegetables, and a lemony sumac dressing. Ready in minutes, perfect for a light lunch or side.

Ingredients

  • 2 pieces pita bread
  • 4 cups romaine lettuce
  • 1 medium cucumber
  • 2 medium tomato
  • 4 medium radishes
  • 2 tablespoons sumac

Instructions

    Preheat oven to 400°F. Cut 2 pita breads into bite-size pieces, toss with 1 tbsp olive oil and a pinch of salt, spread on a baking sheet. Bake until golden and crisp, about 8 minutes.

    In a large bowl, combine 4 cups chopped romaine, 1 diced cucumber, 2 diced tomatoes, and 4 thinly sliced radishes.

    In a small bowl, whisk 3 tbsp olive oil, 2 tbsp lemon juice, 1 tsp sumac, and a pinch of salt and pepper.

    Pour the dressing over the salad and toss well. Add the toasted pita pieces and toss again.

    Sprinkle with remaining 1 tsp sumac and fresh mint leaves if you have them. Serve immediately.
