Ingredients

  • 2 tbsp olive oil
  • 3 medium tomatoes
  • 2 cups baby spinach
  • 4 large eggs
  • 1 cup feta cheese
  • 1 to taste salt and pepper

Instructions

    Heat the 2 tbsp olive oil in a large skillet over medium heat. Add the 3 chopped tomatoes and cook until they soften and release their juices, about 5 minutes.

    Add the 2 cups baby spinach and cook until wilted, about 2 minutes. Season with salt and pepper.

    Crack the 4 eggs directly into the skillet. Stir gently with a spatula, breaking the yolks, and cook until the eggs are just set but still creamy, about 3 minutes.

    Sprinkle the 1 cup crumbled feta cheese over the top and remove from heat. Let it melt slightly, about 1 minute.
