Ingredients
- 1 lb ground beef
- 1 medium onion
- 2 cloves garlic
- 1 large egg
- ½ cup breadcrumbs
- 2 medium green peppers
- 2 medium tomatoes
- 2 pieces flatbread
Instructions
- 1
Grate the 1 medium onion and squeeze out excess liquid. Mince the 2 garlic cloves. In a bowl, mix the beef, onion, garlic, 1 egg, 0.5 cup breadcrumbs, 1 tsp salt, and 1/2 tsp black pepper until just combined.
- 2
Shape the mixture into 12 equal meatballs, about 1.5 inches wide. Place them on a plate and set aside.
- 3
Heat 2 tbsp olive oil in a large skillet over medium-high. Add the meatballs in a single layer, not touching. Cook until browned on all sides, about 8 minutes total, turning occasionally.
- 4
While meatballs cook, halve the 2 green peppers lengthwise and remove seeds. Cut the 2 tomatoes into wedges. Push meatballs to one side of the skillet, add peppers and tomatoes, and cook until charred and softened, about 5 minutes.
- 5
Warm the 2 flatbreads in a dry skillet or microwave for 30 seconds. Serve meatballs and vegetables with flatbread, spooning any pan juices over the top.
