Truffle Spaghetti

Ingredients
- 8 oz spaghetti
- 1 oz truffle shavings
- ½ cup parmesan cheese
- 2 tbsp parsley
- 2 tbsp olive oil
- 1 tsp salt

Bring a large pot of salted water to a boil. Add the 8 oz spaghetti and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water before draining.

In a large skillet, heat the 2 tbsp olive oil over medium heat. Add the drained spaghetti and toss to coat.

Remove the skillet from heat. Add the 1/2 cup parmesan and 1 oz truffle shavings, tossing quickly. Add reserved pasta water a splash at a time until the sauce is creamy and coats the pasta.

Season with the 1 tsp salt (or to taste) and sprinkle with the 2 tbsp chopped parsley. Serve immediately with extra parmesan if desired.
