Ingredients
- 200 g frozen açai packets or frozen acai puree
- ½ cup coconut milk (full-fat, canned)
- 1 whole mango, ripe
- 1 whole banana, fresh
- ½ granola (store-bought or homemade)
- ¼ cup shredded coconut, unsweetened
- 1 tablespoon honey or agave syrup
- 1 tablespoon fresh mint or cilantro (optional)
Instructions
- 1
Remove the frozen açai packet from the freezer and let it sit at room temperature for 1 minute to soften slightly, then open and scoop the contents into a blender.
- 2
Pour 0.5 cup of coconut milk into the blender with the açai, then blend on high speed until the mixture is thick and smooth, like soft-serve ice cream, about 60 seconds.
- 3
Peel the mango by slicing the skin away in vertical strips, then cut the flesh away from the flat pit in two halves, and slice each half into 0.25-inch-thick strips.
- 4
Peel the banana by breaking it in half, then peeling away the skin, and slice the fruit diagonally into 0.25-inch-thick coins.
- 5
Divide the blended açai mixture evenly between two bowls, spreading it into a thick, even layer that covers the bottom of each bowl.
- 6
Arrange the mango slices in a row across the top of each bowl, overlapping them like shingles, then place banana slices in a separate row next to the mango.
- 7
Sprinkle 0.25 cup of granola and 2 tablespoons of shredded coconut evenly over the surface of each bowl.
- 8
Drizzle 0.5 tablespoon of honey over each bowl, then scatter fresh mint or cilantro on top if using.
