20-Min Tonkotsu-Style Pork Ramen

Ingredients

  • 8 oz pork belly or pork shoulder, thinly sliced
  • 6 oz ramen noodles (fresh or dried)
  • 4 cups chicken or pork broth
  • 2 tbsp miso paste (white or red)
  • 1 tbsp soy sauce
  • ½ tbsp sesame oil
  • 2 stalks scallions, thinly sliced

Instructions

    Bring broth to a boil in a large pot over medium-high heat.

    Whisk miso paste with a ladleful of hot broth until smooth, then stir back into the pot.

    Add pork slices and soy sauce. Simmer 3 minutes until pork is just cooked through.

    Drop noodles into the pot and cook until al dente, 3–4 minutes.

    Divide between two bowls. Drizzle each with sesame oil and top with scallions.
