Ingredients
- 2 large ripe tomatoes
- ½ cup kalamata olives
- ½ medium red onion
- 4 slice bread slices
- 2 tbsp olive oil
- ¼ cup fresh basil
- 4 leaf lettuce leaves
- ½ tsp salt
Instructions
- 1
Dice the 2 large tomatoes and place in a bowl. Add 0.5 tsp salt and let sit while you prep the rest, about 5 minutes.
- 2
Pit and roughly chop the 0.5 cup olives. Thinly slice the 0.5 red onion. Add both to the tomatoes.
- 3
Tear the 0.25 cup basil leaves into the bowl. Drizzle with 1 tbsp of the olive oil and toss to combine.
- 4
Toast the 4 bread slices until golden and crisp, about 3-4 minutes. Rub each with a cut garlic clove if you have one.
- 5
Drizzle the remaining 1 tbsp olive oil over the toasted bread. Pile the tomato mixture onto each slice.
- 6
