Ingredients

  • 2 tbsp olive oil
  • 1 medium onion
  • 28 oz canned crushed tomatoes
  • 2 cups vegetable broth
  • 4 cups stale bread
  • 2 cups baby spinach

Instructions

    Heat the 2 tbsp olive oil in a large pot over medium. Add the 1 diced onion and cook until soft and translucent, about 5 minutes.

    Stir in the 28 oz crushed tomatoes and 2 cups vegetable broth. Bring to a simmer, then cook for 5 minutes until slightly thickened.

    Add the 4 cups torn bread and 2 cups spinach. Stir and cook for 3-4 minutes until the bread softens and the spinach wilts.
