Ingredients
- 4 cups vegetable broth
- 1 bunch asparagus
- 8 oz firm tofu
- 2 whole chili peppers
- 1 tbsp soy sauce
- ½ tsp salt

Trim the woody ends from the 1 bunch asparagus and cut into 2-inch pieces. Drain the 8 oz firm tofu and cut into 1-inch cubes.

In a pot, bring the 4 cups vegetable broth to a boil over high heat. Add the 2 whole chili peppers (halved if you prefer more heat) and reduce to a simmer.

Add the asparagus pieces and tofu cubes to the broth. Simmer gently until the asparagus is bright green and tender-crisp, about 5-7 minutes.

Stir in the 1 tbsp soy sauce and 0.5 tsp salt. Taste and adjust seasoning, then ladle into bowls and serve hot.
