Ingredients

  • 1 lb feta cheese, crumbled
  • 1 cup ricotta cheese
  • 2 whole eggs
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh mint, chopped
  • ½ tsp black pepper
  • 12 sheets phyllo pastry sheets
  • ½ cup butter, melted

Instructions

    Preheat oven to 350°F (175°C).

    In a large bowl, combine crumbled feta, ricotta, eggs, dill, mint, and black pepper. Mix until well combined.

    Brush a 9x13 inch baking dish with melted butter.

    Layer 6 phyllo sheets into the dish, brushing each sheet generously with melted butter.

    Spread the cheese filling evenly over the phyllo layers.

    Layer remaining 6 phyllo sheets on top, brushing each with melted butter.

    Score the top into 8 squares or diamond shapes using a sharp knife.

    Bake for 35-40 minutes until golden brown and crispy.
