Ingredients

  • 8 sheets phyllo dough
  • 1.5 cups feta cheese, crumbled
  • 2 whole eggs
  • 3 tbsp fresh dill, chopped
  • ½ cup butter, melted
  • ⅓ cup onion, finely minced

Instructions

    Preheat oven to 400°F. Mix feta, eggs, dill, and minced onion in a bowl until combined.

    Lay one phyllo sheet on a work surface. Brush lightly with melted butter.

    Layer and butter 3 more sheets on top, brushing each lightly between layers.

    Spread half the feta filling in a line across the bottom third of the phyllo stack.

    Roll up tightly from the bottom. Transfer seam-side down to a buttered baking sheet.

    Repeat with remaining 4 phyllo sheets and filling to make a second roll.

    Brush both rolls with remaining butter. Bake until golden brown, 12–14 minutes.
