Ingredients
- 1 cup quinoa
- 2 cups water
- 2 medium tomatoes
- 1 large avocado
- ½ small red onion
- ¼ cup fresh parsley
- 1 whole lime
- 2 tablespoons olive oil

Rinse the 1 cup quinoa in a fine mesh strainer. Combine with 2 cups water in a medium saucepan and bring to a boil over high heat.

Reduce heat to low, cover, and simmer until the quinoa is tender and has absorbed all the water, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork.

While the quinoa cooks, dice the 2 tomatoes and 1 avocado into bite-sized pieces. Finely chop the 0.5 small red onion and 0.25 cup parsley.

In a small bowl, whisk together the juice of 1 lime, 2 tablespoons olive oil, and a pinch of salt and pepper to make the dressing.

In a large bowl, combine the cooked quinoa, tomatoes, avocado, red onion, and parsley. Pour the dressing over the salad and toss gently to coat.
