Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 medium oranges
  • 1 cup cherry tomatoes
  • ½ small red onion
  • 2 tablespoons olive oil

Instructions

    Rinse the 1 cup quinoa in a fine sieve. In a small pot, combine quinoa and 2 cups water, bring to a boil, then reduce to a simmer, cover, and cook until water is absorbed and quinoa is tender, about 15 minutes. Fluff with a fork and let cool slightly.

    While quinoa cooks, peel the 2 oranges and cut into segments or slices. Halve the 1 cup cherry tomatoes and thinly slice the 0.5 small red onion.

    In a large bowl, combine the cooked quinoa, orange segments, tomatoes, and red onion. Drizzle with the 2 tbsp olive oil and toss gently to combine.

    Season with salt and pepper to taste. If you have fresh thyme, strip a few leaves over the top for extra flavor. Serve warm or at room temperature.
