  • 1 cup tapioca pearls
  • 2 cups coconut milk
  • 1 cup cooked red beans
  • ½ cup sugar
  • ¼ teaspoon salt
  • 4 cups water
  • 1 slice bread slice
  • 2 tablespoons green onions

Instructions

    In a medium pot, bring 4 cups water to a boil. Add 1 cup tapioca pearls and cook over medium heat, stirring occasionally, until they turn translucent and float, about 15 minutes.

    Drain the pearls and rinse with cold water. Set aside.

    In the same pot, combine 2 cups coconut milk, 0.5 cup sugar, and 0.25 teaspoon salt. Warm over low heat, stirring, until sugar dissolves and mixture is smooth, about 3 minutes.

    Add the cooked tapioca pearls and 1 cup red beans to the coconut milk. Simmer gently, stirring, until everything is heated through and slightly thickened, about 5 minutes.

    Toast 1 bread slice until golden and crisp, about 2 minutes. Cut into small cubes.
