Ingredients

  • 1 cup glutinous rice flour
  • ½ cup water
  • ½ teaspoon pandan extract
  • 2 cups coconut milk
  • ¼ cup sugar
  • ¼ teaspoon salt

Instructions

  1. 1

In a bowl, mix 1 cup glutinous rice flour with 0.5 cup water and 0.5 teaspoon pandan extract until a soft dough forms, about 2 minutes.

  2. 2

Roll the dough into 1-inch balls. You should get about 12 balls.

  3. 3

Bring a pot of water to a boil, then drop in the balls. Cook until they float to the surface, about 3-4 minutes. Remove with a slotted spoon.

  4. 4

In a separate pot, heat 2 cups coconut milk, 0.25 cup sugar, and 0.25 teaspoon salt over medium, stirring until sugar dissolves, about 3 minutes.

  5. 5

Divide the dumplings among bowls, pour the warm coconut milk over them, and serve immediately.
