Ingredients

  • 2 cups cooked jasmine rice
  • 1 lb pork tenderloin
  • 2 eggs
  • 1 cucumber
  • 2 green onions
  • 3 tbsp fish sauce

Instructions

    Slice the 1 lb pork tenderloin into thin strips. In a bowl, mix the pork with 1 tbsp fish sauce and let sit for 5 minutes.

    Boil the 2 eggs in a small pot of water for 8 minutes, then drain and cool under cold water. Peel and halve them.

    Heat a large skillet over medium-high heat. Add the pork and cook, stirring, until browned and cooked through, about 5 minutes.

    Slice the 1 cucumber into rounds and chop the 2 green onions. For the sauce, stir together the remaining 2 tbsp fish sauce with 2 tbsp water and 1 tsp sugar (if you have lime juice or chili flakes, add them).

    Divide the 2 cups rice between two bowls. Top with the pork, eggs, cucumber, and green onions. Serve with the dipping sauce on the side.
