Ingredients

  • 8 oz rice noodles
  • 1 tbsp vegetable oil
  • 2 cloves garlic
  • 8 oz fish balls
  • 8 oz firm tofu
  • 4 cups vegetable broth
  • 2 tbsp soy sauce
  • ¼ cup cilantro

Instructions

    Soak the 8 oz rice noodles in hot water until pliable, about 10 minutes, then drain and set aside.

    Heat the 1 tbsp vegetable oil in a large pot over medium. Add the 2 minced garlic cloves and cook until fragrant, about 1 minute.

    Add the 8 oz fish balls and 8 oz cubed tofu to the pot. Stir gently for 2 minutes until lightly browned.

    Pour in the 4 cups vegetable broth and 2 tbsp soy sauce. Bring to a boil, then reduce heat and simmer for 5 minutes until fish balls are heated through.

    Divide the soaked noodles among 4 bowls. Ladle the hot soup over the noodles.

    Garnish each bowl with the 0.25 cup chopped cilantro and serve immediately.
