Ingredients
- ½ lb shrimp, peeled and deveined
- ½ lb squid, cleaned and cut into rings
- 2 tbsp fish sauce
- 2 tbsp lime juice (from 1 lime)
- 1.5 tbsp Thai red curry paste
- 1 whole red bell pepper, sliced
- 1.5 cups snap peas

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add shrimp and squid, sear 2 minutes without stirring until edges start to curl.

Stir in curry paste and minced garlic (3 cloves), cook 30 seconds until fragrant.

Toss in bell pepper and snap peas, stir-fry 2 minutes until peppers soften slightly.

Pour in fish sauce and lime juice, stir to coat everything, then taste and adjust seasoning.
