- ½ cup tapioca starch
- ½ cup sugar
- 3 leaves pandan leaves
- 2 drops yellow food coloring
- ¼ teaspoon salt

In a bowl, whisk together 1.5 cups coconut milk, 0.5 cup tapioca starch, 0.5 cup sugar, and 0.25 teaspoon salt until smooth. Tie 3 pandan leaves in a knot and add to the mixture; let steep for 5 minutes.

Remove the pandan leaves. Divide the mixture into two equal parts. Add 2 drops of yellow food coloring to one part and stir well.

Prepare a steamer and a small heatproof dish (about 6 inches wide). Pour the uncolored mixture into the dish and steam over medium heat for 5 minutes, until just set.

Gently pour the yellow mixture over the set layer. Continue steaming for another 8-10 minutes, until the top is firm to the touch and a toothpick inserted comes out clean.

Let cool completely, then slice into diamond shapes and serve. Store leftovers in the fridge.
