Ingredients

  • 1.5 cups cooked jasmine rice
  • 4 cups vegetable broth
  • 1 tbsp, minced fresh ginger
  • 1.5 tsp fish sauce
  • ½ whole lime (juiced)
  • ½ cup, mixed fresh cilantro, mint, and Thai basil (chopped)
  • 2 stalks green onion (sliced thin)

Instructions

    Bring broth to a simmer in a medium pot over medium heat, about 3 minutes.

    Add minced ginger and stir, cooking for 30 seconds until fragrant.

    Stir in cooked jasmine rice and fish sauce, simmer for 2 minutes until heated through.
