Ingredients

  • 1.5 lb chicken thighs and drumsticks (bone-in, skin-on)
  • 6 count garlic cloves
  • 1 count lime
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp honey

Instructions

    Mince garlic and squeeze lime juice into a bowl. Whisk with soy sauce, fish sauce, honey, and a pinch of salt.

    Pat chicken dry. Coat with the marinade, rubbing it under and over the skin. Let sit 5 minutes.

    Arrange chicken skin-side down on a sheet pan. Broil on the middle rack 7 minutes until skin crisps.

    Flip chicken skin-side up. Broil another 5–7 minutes until skin is deep golden and charred at edges.

    Check thickest thigh reaches 165°F at the bone. If needed, broil 1–2 minutes more.

    Rest 2 minutes, then serve hot.
