Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 whole red bell pepper
- 1 whole green bell pepper
- 2 whole roma tomatoes
- ½ whole red onion
- 1 box quick-cook bulgur pilaf (packaged)
- 2 whole flatbread or pita

Cut chicken thighs into 2-inch chunks. Toss with 2 tbsp olive oil, 1 tsp sumac, salt, pepper, and 1 minced garlic clove.

Chop peppers into 2-inch pieces, halve tomatoes lengthwise, and slice onion into thick rings. Toss all vegetables with 1 tbsp oil and salt.

Spread chicken and vegetables on a sheet pan. Roast at 425°F until chicken is cooked through and edges char, 14–16 minutes.

While chicken roasts, prepare bulgur pilaf according to package directions. Warm flatbread in a dry skillet 30 seconds per side.
