Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup milk
- 1 large egg
- 1 medium apple
- 2 tablespoons butter
- 2 tablespoons sugar
Instructions
- 1
In a large bowl, whisk together the 1 cup flour, 1 teaspoon baking powder, 2 tablespoons sugar, and 1/4 teaspoon salt.
- 2
In a small bowl, beat the 1 egg, then whisk in the 1 cup milk until combined.
- 3
Pour the wet ingredients into the dry and stir until just combined; the batter should be slightly lumpy. Peel and finely dice the 1 apple, then fold it into the batter.
- 4
Melt 1 tablespoon of the butter in a large nonstick skillet over medium heat. Pour about 1/4 cup of batter per pancake, cooking 2-3 at a time without crowding.
- 5
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown on the other side, another 1-2 minutes.
- 6
Repeat with the remaining batter, adding the remaining 1 tablespoon butter to the skillet as needed. Serve warm with extra sugar or maple syrup if desired.
