Ingredients
- 1 lb jumbo lump crab meat
- 2 tbsp Thai red curry powder
- 1 whole lime (juiced + zested)
- 4 cloves garlic, minced
- 1 tbsp fish sauce
- 8 oz mixed Asian greens (bok choy, Chinese broccoli, or gai lan)
- 3 tbsp neutral oil
- ½ whole red chile, thinly sliced (optional garnish)

Heat 1.5 tbsp oil in a large skillet over medium-high until shimmering, ~90 seconds.

Add garlic and cook 30 seconds until fragrant, then add curry powder and stir constantly for 20 seconds.

Add crab, lime juice, and fish sauce; toss gently for 2 minutes until heated through and fragrant.

Transfer crab to a plate. Add remaining 1.5 tbsp oil to the skillet and increase heat to high.

Add greens and stir-fry for 2–3 minutes until stems are tender and leaves begin to char at the edges.

Return crab to the skillet, toss once, then plate. Garnish with lime zest and fresh chile if desired.
