Ingredients

  • ¾ lb beef sirloin or flank steak, sliced thin
  • 3 whole Thai red or green chilies (or jalapeños), sliced
  • 4 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 whole lime
  • 3 tbsp neutral cooking oil

Instructions

    Pat beef dry with paper towels, then season generously with salt and black pepper.

    Heat oil in a 12-inch skillet or wok over high heat until it shimmers, about 90 seconds.

    Add beef in a single layer and let it sear without stirring for 2 minutes until edges brown.

    Stir the beef and cook 1 more minute, then push to the side of the pan.

    Add garlic and chilies to the empty space, stir for 30 seconds until fragrant, then toss with beef.

    Pour fish sauce and soy sauce over the beef, toss to coat, then squeeze lime over the top and serve.
