Ingredients
- ¾ lb beef sirloin or ribeye
- 3 whole fresh Thai bird chilis (or jalapeños)
- 4 cloves garlic
- 2 tbsp soy sauce
- ½ tbsp fish sauce
- 2 tbsp neutral cooking oil

Slice beef thinly against the grain, about 1/8-inch thick. Slice chilis lengthwise; mince garlic.

Heat oil in a 12-inch skillet over high heat until it shimmers and wisps of smoke appear, ~90 seconds.

Add beef in a single layer and sear without stirring until edges brown, ~60 seconds. Stir and cook another 60 seconds.

Push beef to the side. Add garlic to the empty space, cook 30 seconds until fragrant, then toss together.

Add chilis, soy sauce, and fish sauce. Toss constantly for 60 seconds until chilis soften and sauce coats the beef.
