Ingredients
- 1 cup rice
- 1 can (15 oz) chickpeas
- 2 tbsp olive oil
- 1 medium onion
- 2 cloves garlic
- 2 cups vegetable broth

Heat the 2 tbsp olive oil in a medium pot over medium heat. Add the 1 diced onion and cook until soft and translucent, about 5 minutes.

Stir in the 2 minced garlic cloves and the 1 cup rice. Cook for 1 minute until the rice is lightly toasted and fragrant.

Add the drained chickpeas and 2 cups vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is tender and liquid is absorbed, about 15 minutes.
