Ingredients

  • 12 leaves grape leaves (jarred or brined)
  • 1 cup white rice
  • ½ cup fresh herbs (dill, parsley, mint)
  • ½ cup red bell pepper
  • 2 tbsp olive oil
  • 1 whole lemon

Instructions

  1. 1

Rinse the 12 grape leaves under cold water and pat dry. Trim any tough stems.

  2. 2

In a bowl, mix 1 cup rice, 1/2 cup chopped herbs, 1/2 cup finely diced red pepper, 1 tbsp olive oil, and a pinch of salt and pepper.

  3. 3

Place a grape leaf shiny-side down. Add 1-2 tbsp filling near the stem, fold sides over, and roll tightly. Repeat with remaining leaves.

  4. 4

Arrange rolls seam-side down in a pot. Add 1 cup water, 1 tbsp olive oil, and juice of 1 lemon. Cover and simmer over low heat until rice is tender, about 20 minutes.

  5. 5

Let rest 5 minutes, then serve warm or at room temperature with extra lemon wedges.
