Ingredients
- 2 tbsp olive oil
- 1 large onion
- 3 medium potatoes
- 2 cups green beans
- 4 medium tomatoes
- 2 cups vegetable broth
- 1 tsp ground cumin
- ¼ cup fresh parsley

Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 sliced onion and cook until soft and golden, about 8 minutes.

Stir in the 1 tsp ground cumin and cook for 1 minute until fragrant.

Add the 3 medium potatoes (cut into chunks) and 2 cups green beans (trimmed). Stir to coat with the onion mixture.

Add the 4 chopped tomatoes and 2 cups vegetable broth. Bring to a boil, then reduce heat to low.
