Vegetable Tagine

Ingredients

  • 2 tbsp olive oil
  • 1 large onion
  • 3 medium potatoes
  • 2 cups green beans
  • 4 medium tomatoes
  • 2 cups vegetable broth
  • 1 tsp ground cumin
  • ¼ cup fresh parsley

Instructions

    Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 sliced onion and cook until soft and golden, about 8 minutes.

    Stir in the 1 tsp ground cumin and cook for 1 minute until fragrant.

    Add the 3 medium potatoes (cut into chunks) and 2 cups green beans (trimmed). Stir to coat with the onion mixture.

    Add the 4 chopped tomatoes and 2 cups vegetable broth. Bring to a boil, then reduce heat to low.

    Cover and simmer until potatoes are tender and sauce has thickened, about 30 minutes.

    Stir in the 1/4 cup chopped fresh parsley. Season with salt and pepper to taste.
