Ingredients

  • ¾ lb beef sirloin or ribeye, thinly sliced against the grain
  • 2 whole fresh red or Thai bird chilies, sliced into rings
  • 4 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 8 oz rice noodles, cooked
  • 1 whole avocado, sliced

Instructions

  1. 1

Heat 2 tbsp oil in a large skillet over high heat until it shimmers, about 90 seconds.

  2. 2

Add beef in a single layer. Don't stir for 2 minutes — let it sear and develop color on one side.

  3. 3

Flip the beef, breaking apart any clumps. Cook another 90 seconds until edges brown.

  4. 4

Push beef to the side. Add garlic and chilies to the cleared space, stirring for 30 seconds until fragrant.

  5. 5

Toss beef with garlic and chilies. Pour in fish sauce, soy sauce, and lime juice. Stir for 30 seconds.

  6. 6

Serve beef over warm rice noodles. Top with sliced avocado and a lime wedge on the side.
