Ingredients
- ¾ lb beef sirloin or ribeye, thinly sliced against the grain
- 2 whole fresh red or Thai bird chilies, sliced into rings
- 4 cloves garlic, minced
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 8 oz rice noodles, cooked
- 1 whole avocado, sliced

Add beef in a single layer. Don't stir for 2 minutes — let it sear and develop color on one side.

Push beef to the side. Add garlic and chilies to the cleared space, stirring for 30 seconds until fragrant.
