Ingredients

  • 1 lb beef sirloin or flank steak, sliced into 1/4-inch strips
  • 2 medium bell peppers (red and/or yellow), cut into 1-inch pieces
  • 1 medium yellow onion, cut into 1-inch chunks
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar (or white vinegar)
  • ½ tsp red pepper flakes (or sriracha for heat)

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add beef in a single layer. Sear without stirring for 90 seconds until edges brown, then flip and cook another 60 seconds. Transfer to a plate.

    Add peppers and onion to the same skillet. Stir-fry over medium-high heat for 4 minutes until edges start to char and soften.

    Pour in soy sauce, vinegar, and pepper flakes. Stir constantly for 30 seconds until fragrant.

    Return beef and any juices to the skillet. Toss everything together for 60 seconds until coated and warmed through.
