Ingredients
- 1 lb beef sirloin or flank steak, sliced into 1/4-inch strips
- 2 medium bell peppers (red and/or yellow), cut into 1-inch pieces
- 1 medium yellow onion, cut into 1-inch chunks
- 3 tbsp soy sauce
- 1 tbsp rice vinegar (or white vinegar)
- ½ tsp red pepper flakes (or sriracha for heat)

Heat 2 tbsp oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

Add beef in a single layer. Sear without stirring for 90 seconds until edges brown, then flip and cook another 60 seconds. Transfer to a plate.

Add peppers and onion to the same skillet. Stir-fry over medium-high heat for 4 minutes until edges start to char and soften.

Pour in soy sauce, vinegar, and pepper flakes. Stir constantly for 30 seconds until fragrant.
