Ingredients

  • 3 cups cooked rice
  • ½ pound ground pork
  • 4 cloves garlic
  • 2 red chili peppers
  • 1 cup Thai basil leaves
  • 2 eggs

Instructions

  1. 1

Heat 2 tbsp vegetable oil in a wok or large skillet over high heat. Add 4 minced garlic cloves and 2 sliced red chili peppers, stir-fry until fragrant, about 30 seconds.

  2. 2

Add 1/2 lb ground pork and stir-fry, breaking it up, until browned and cooked through, about 4-5 minutes. Season with 2 tbsp soy sauce and 1 tsp sugar if you have them.

  3. 3

Add 3 cups cooked rice and toss everything together, pressing and stirring until the rice is hot and well coated, about 2-3 minutes.

  4. 4

Turn off the heat and stir in 1 cup Thai basil leaves until just wilted. In a separate pan, fry 2 eggs sunny-side up in 1 tbsp oil until the whites are set but yolks are runny, about 2-3 minutes.

  5. 5

Divide the fried rice between plates and top each with a fried egg. Serve immediately.
