Ingredients
- 1 lb ground pork
- 3 medium shallots
- 2 tbsp fish sauce
- 2 tbsp lime juice
- ½ cup fresh mint leaves
- 8 sheets rice paper wrappers

Thinly slice 2 of the shallots and set aside. Finely chop the remaining 1 shallot for the dressing.

In a large skillet over medium-high heat, add the 1 lb ground pork and cook, breaking it up, until browned and cooked through, about 8 minutes. The meat should be sizzling and no longer pink.

Add the sliced shallots to the pork and stir-fry until they are golden and crispy, about 3 minutes. The shallots should smell nutty and look browned at the edges.

Remove the skillet from heat. Stir in the 2 tbsp fish sauce, 2 tbsp lime juice, and the chopped shallot. Taste and adjust with more lime or fish sauce if needed.

Fold in the 0.5 cup mint leaves just until wilted. Serve warm with the 8 rice paper wrappers, dipping them in water briefly to soften before wrapping the meat.
