Ingredients
- 1.5 lb boneless skinless chicken thighs
- ½ cup soy sauce
- ¼ cup honey
- 2 tbsp rice vinegar
- 2 cloves garlic
- 1 tbsp cornstarch
- 12 oz cooked noodles
- 2 tbsp vegetable oil

In a small bowl, whisk together the 1/2 cup soy sauce, 1/4 cup honey, 2 tbsp rice vinegar, 2 minced garlic cloves, and 1 tbsp cornstarch until smooth. Set aside.

Cut the 1.5 lb chicken thighs into bite-sized pieces. Pat dry with paper towels.

Heat the 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook without stirring until browned on one side, about 4 minutes. Flip and cook until cooked through, about 4 more minutes.

Pour the sauce over the chicken. Stir and cook until the sauce thickens and coats the chicken, about 2 minutes. The sauce should cling to the chicken and look glossy.

Add the 12 oz cooked noodles to the skillet. Toss everything together until the noodles are well coated with the sauce and heated through, about 2 minutes. Serve hot.
