Ingredients

  • 2 large onion
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon baking powder
  • 1.5 cups ice-cold water
  • 3 cups vegetable oil
  • ½ cup mayonnaise
  • 2 tablespoons lemon juice

    Slice the 2 large onions into 1/2-inch thick rings and separate them. Pat dry with paper towels.

    In a bowl, whisk together 1 cup flour, 1/2 cup cornstarch, 1 teaspoon baking powder, and 1/2 teaspoon salt. Add 1.5 cups ice-cold water and stir until just combined; the batter should be lumpy.

    Heat 3 cups vegetable oil in a deep pot to 375°F (190°C). Meanwhile, make the dipping sauce by mixing 1/2 cup mayonnaise, 2 tablespoons lemon juice, and a pinch of salt.

    Dip each onion ring into the batter, letting excess drip off. Carefully place a few rings into the hot oil without crowding; fry until golden and crispy, about 2-3 minutes per batch.

    Remove rings with tongs and drain on paper towels. Repeat with remaining rings. Serve hot with the dipping sauce and a side salad of lettuce, red bell pepper, and olives if desired.

    For extra flavor, add a pinch of paprika or garlic powder to the batter if you have them.
